Madame West’s take on the great Italian staple is reimagined in Melbourne’s ever-growing western corridor. Drawing from a farm-to-plate philosophy, our ingredients are consciously sourced from local growers throughout Australia, with a handful of carefully selected specialty ingredients imported from Italy.
The 36hr rested dough is methodically prepared and delivered to perfection in the Marana Forni - the Ferrari of pizza ovens. The result: a light, easy-to-digest
chef-d'oeuvre pizza base that pays homage to the classics, but gives a big nod to the unconventional. Madame does things her way and they’re a little different… a fabulous kind of different!

Developed with the help of Melbourne wine lover Andrew De Angelis, we’re showcasing some of the best local Australian wines alongside international varietals from Italy, France and New Zealand. From delicate + fruity to big + bold, we’ve married the flavours from our pizza menu to bring you an offering we think you’re going to love. There’s prosecco to play with during the summer months and French bubbles for Madame too – she’s a little fancy like that.
We’re proud to be supporting local and pouring TAP wines’ Rosso + Bianco Montevecchio range, locally grown at the Chalmers’ family vineyard in Heathcote country Victoria.
And beer drinkers, we haven’t forgotten about you. With a handful of local and abroad varietals in the fridge, TAP’s Viola premium blonde lager 5.3% will also be pouring at the bar.
